My Own Personal Brand of Heroin

The other night I made the most marvelous things – Roasted Rosemary Garbanzo Snack. These are my own personal brand of heroin – I cannot get enough of them!

At first I was skeptical – a snack made from those little smelly mushy “beans”? Really? Who would eat that? Then I was given some at the kickoff party for the Back in the Swing Cookbook and I’ve been in love with them ever since! (And I love the cookbook, too!)

These things are ridiculously easy to make (just 3 ingredients!) and have a subtle nutty flavor that I can’t resist. Each time I make what is supposed to be eight servings (I use two 29-oz cans instead of one 15-oz can). I typically give one or two servings to my BFF (cuz she loves them as much as I do) and I eat half of what was left the same night I make them. My stomach is a little uneasy with the influx of so many at once, but I can’t stop eating them!

What’s even better about this snack is that it’s good for you! They’re good for digestive support – 65 to 75 percent of the fiber in garbanzo beans is insoluble fiber, the by-products of which fuels intestinal cells, keeping the colon working efficiently. (Or so I’m told…I’m not a nutritionist.)

I highly recommend making some of these today and to keep making them regularly – which you’ll have to do since they won’t last long!

Recipe

Ingredients

  • 1 can (15-ounce) can garbanzo beans
  • 1 tablespoon olive oil
  • 1 tablespoon fresh rosemary leaves or
    1 teaspoon dried rosemary leaves

Directions

  • Preheat oven to 400 degrees F.
  • Drain, rinse & pat dry the garbanzo beans.
  • In a mixing bowl, gently toss beans with oil & rosemary.
  • Spread in a single layer on a rimmed baking sheet
  • Bake for 25 – 30 minutes, turning beans halfway through. Snack is ready when browned & crispy.

Notes

SAMSUNGMine have never been “crispy”. I think this is because I cook so many at once. Also, I tend to forget the “pat dry” instructions, so that might effect the outcome. These store well, but make sure they are cool before you seal up the container. I prefer to eat them fresh from the oven (and my oft-burned tongue can attest to that) but they’re good at room temp as well.
